These pumpkin spice crunch stuffed dates are my favorite fall recipe to whip up since they’re so quick & easy to make!
Ingredients:
(gf, df, & vg)
5 to 6 medjool dates, pitted
3 tbsp almond butter
1 & 1/2 tbsp pumpkin purée
2 to 3 tsp maple/date syrup
1/4 tsp pumpkin spice
3 to 4 tbsp puffed cereal
melted dark chocolate to coat
Directions:
Mix together the almond butter, pumpkin, maple/date syrup, & pumpkin spice, then fold in the puffed cereal.
Make an opening in the dates & add the filling.
Cover the dates in melted chocolate (I also drizzled mine with some @lilys_sweets caramel chocolate) & sprinkle with some flaky sea salt.
Place in freezer for 10-20 min, or until chocolate has hardened.
