Rhubarb, Strawberry & Lemon Tiramisu 🍋🍓
Spring gives me so much happiness, and with mothers day tomorrow I know I wanted to make something so special. A gorgeous non traditional tiramisu made with rhubarb jam, lemon curd, stewed strawberries and vanilla chantilly… it just screams spring
Here’s what you need:
Rhubarb jam
5 stalks of rhubarb
1/2 cup sugar
Tablespoon of lemon juice
Stewed rhubarb and strawberries
2 cups strawberries cut in half
1 stalk rhubarb
2 tablespoons sugar
Vanilla chantilly
1 cup 35 percent cream
1 vanilla pod
1/4 cup sugar
Directions:
To assemble - 3 packs of lady fingers & 2 cups of lemon curd (store bought or homemade)
Start off by making your rhubarb jam, cook everything until nice and jammy and place in the fridge to completely cool off
Make your strawberries by placing in a pot with some sliced rhubarb and the sugar and cook for only about 5 minutes until slightly soft and a syrup has been made
Make your chantilly in a stand mixer until stiff peaks
Once all your jams have cooled down it’s time to start layering
Start with the lady fingers, then the lemon curd, then whipped cream, and repeat this process one more time . You should end with the whipped cream, drizzle on the stewed strawberries and rhubarb and let set in the fridge over night
