Directions:
Add all the ingredients except the chocolate chips to a food processor and blend together to combine. You can alternatively mix everything together in a large mixing bowl.
Add the white chocolate chips and gently pulse together just to combine. Then roll the dough into balls, about 1 tablespoon per ball.
Roll each matcha energy ball into a plate of shredded coconut to coat. Then place the balls in the fridge in an airtight container for at least 2 hours before eating.
