Passover is coming and this is the perfect sweet (and healthier) snack to have in freezer at all time. You can also coat strawberries with this crispy chocolate or even dates. The sky is the limit. The crispy crunch is addicting and almost adds a nutty peanut butter flavor. Trust me and make it. K?

Ingredients

  • 1 cup dry, raw quinoa

  • 20oz good quality dark chocolate

  • Maldon salt to top


Instructions

Line a baking sheet with parchment paper and set aside.

Place the quinoa in a medium-large frying pan and turn the fire onto high-medium flame. 

Toast the quinoa, by mixing around every 30 seconds or so to avoid burning the quinoa. You will start to smell the nutty aroma and hear the quinoa making little snapping noises. Keep toasting until the popping slows which will mean that it's all popped. This should take around 5 minutes but be careful not to burn the quinoa. Keep a watch on it and keep mixing it around until it's all golden and popping slows. 

Turn the flame off completely and pour the chocolate right into the pan. Let sit for a minute and then mix until completely melted. Immediately pour into the lined baking sheet and spread out in to a rectangle the size of the baking sheet. Place in the fridge or freezer to set and then crack into shards.

*I love keeping this in the freezer and enjoying it cold!
