My Favorite Quick Healthy Breakfast
I think eating breakfast is SO important to give you and your brain a good jump start on the day. I also need my coffee in the morning and so its best I have some food in my belly! Time is always the issue when it comes to breakfast which is why its so easy to forgot. This quick healthy breakfast is my favorite because you can grab and go if needed.
Love my Chia Seed Pudding. It takes 15 minutes on Sunday night to prepare an entire batch for the week and it will leave you feeling healthy, happy and satisfied all morning long.
Ingredients
Chia Seeds (I love Navitas)
Unsweetened almond milk
Walnuts
Almonds
Cinnamon
Honey
Fruit
How I Make It
Mix 2 tbs chia seeds with ½ cup unsweetened almond milk (or any dairy-free milk of your choice just make sure it’s unsweetened), let it sit for 1 minute. Then add chopped walnuts (I use my hands), sliced almonds, cinnamon and and a dash of honey. Stir again one last time and refrigerate overnight. Option in the am to add blueberries on top for additional brain power. Prep the pudding using 5 different small to-go containers or small mason jars and store them in your refrigerator, then you can grab and go every morning.
Not only is the pudding super tasty, chia seeds are LOADED with antioxidants, fiber, contain omega 3s, zinc, protein and they even help lower cholesterol. Does it get any better than that? Enjoy!! And if you make some, tag me in your pics.
