Welcome back to episode 21 of healthy easy snacks! This is probably my most made energy balls that I love to meal prep.

These energy bites are made with just 5 ingredients and come together in 10 minutes! And If you are a salted caramel lover like me they seriously taste just like it!

Ingredients:

1 cup pitted Medjool dates (packed)
1 cup blanched almonds or cashews
1/4 cup unsweetened shredded coconut (+extra for rolling)
1/4 tsp salt
(optional) 1/2 tsp vanilla extract

Directions:

Add the Medjool dates, almonds, shredded coconut and salt to a food processor and pulse until it forms into a sticky dough.

Using your hands, roll into bite-sized balls, and then roll into a plate of shredded coconut to top if desired.

Store in the fridge in an airtight container
