Say hello to Rice Krispies Treats’ cooler older cousin: No-Bake Almond Butter Potato Chip Bars 👋🏻

Growing up with food allergies has made me pretty creative in the kitchen! So when @popchips sent me a few of their bags to try, I knew I wanted to turn them into a fun sweet and salty treat! One-bowl recipes are my motto nowadays because who wants to spend a lot of time cleaning up! I’ve also shared of a few of my favorite kitchen hacks like how to mix a new jar of almond butter and melt dairy-free chocolate in the microwave.

You can swap the almond butter for an allergy-friendly alternative like sunflower seed or chickpea butter.

Ingredients:

  • 1 bag of Sea Salt PopChips

  • 1 cup almond butter (or any nut or seed butter)

  • 1/3 honey

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • 2 cups dairy-free chocolate chips

  • 1 tsp coconut oil

Directions:

  1. Crush the chips and add them to a bowl with the almond butter, honey, vanilla extract, and salt.

  2. Mix until well combined. Then, press the mixture into a lined 8x8 pan.

  3. Melt the chocolate in the microwave with the oil.

  4. Pour the chocolate on top of the bars.

  5. Place the pan in the refrigerator to set for an hour. Cut into squares and enjoy!
