Thanksgiving is this weekend, and with a house full of family and friends this Pumpkin Baked Brie is a perfect start on your charcuterie board while your guests wait for that delicious turkey! 🎃
The crispy pastry, gooey cheese, and sweet pumpkin butter.. oooooo I’m salivating. 🤤
Ingredients:
Pumpkin Butter:
1 can pumpkin purée OR 1 whole sugar pumpkin
1 tbsp cinnamon
1 tbsp nutmeg
1/2 tsp ground ginger
1/2 tbsp clove
1/2 tsp star anise
1/4 cider vinegar
2 tbsp maple syrup
1/2 cup brown sugar
Pumpkin Baked Brie
1 sheet puff pastry
1 small wheel Brie cheese
1 egg
4 tbsp pumpkin butter (recipe below)
Butchers twine
Directions:
Lay down your puff pastry and spoon pumpkin butter in the center. Add your brie on top, making sure you have enough room of pastry on the sides to fold over your brie.
Fold pastry over the brie and seal tightly set to the side.
With your twine, cut long enough pieces to tie over the brie. Lay them down in a web-like pattern, then place your brie package in the center with the seal of the pastry facing up.
Tie each piece, creating a cute pumpkin shape. Flip the package over and place on a sheet tray lined with parchment.
Mix your egg to make an egg wash and brush over the whole pastry. Bake at 375F until the pastry is golden brown and crispy.
Finish with pumpkin butter and serve with some delicious crostini and crackers, and taste the season!
