Air Fryer Gnocchi Carbonara 🥓

Did you know you can cook gnocchi in the air fryer? To all the Italians out there, I know this isn’t a traditional carbonara, but it’s delicious and beyond easy for a busy midweek meal.
Ingredients:
- 1/2 tbsp olive oil
- 350g gnocchi
- 100g unsmoked bacon lardons
- 3 egg yolks
- 40g parmesan + extra to finish
- Pepper
- Splash of skimmed milk
Method:
1. Remove the tray from your air fryer and pop your gnocchi and bacon lardons into the bottom air fryer with a splash of olive oil and black pepper and air fry for 12 minutes at 200.
2. Once cooked, prepare your sauce by adding 3 egg yolks, a splash of milk, parmesan and plenty of black pepper
3. Pour the sauce over the gnocchi and stir for 1-2 minutes so the sauce cooks but doesn’t scramble. Don’t airfry it again there’s enough heat in the basket
4. Serve the gnocchi with a sprinkle of parmesan and more black pepper and enjoy!
