Picky Eater Pasta that your family will actually eat and love!!

Picky Eater Pasta:
4 quartered tomatoes
1 bell pepper , cut in half or 4-5 mini peppers
1 onion, chopped
2 carrots, chopped
1 zuchinni, chopped
4-5 garlic cloves or 1 garlic head, top knob sliced off
About 1 tsp sea salt
2-3 tbsp avocado or olive oil
1/2 cup cottage cheese
1/2 cup reserved pasta water
1 lb pasta, I used @GOODLES for added protein and nutrients

Optional: 2 tsp butter, 1/4 tsp dried oregano (I also liked adding an additional 1/4 tsp of garlic powder but my kids thought that it made it more spicy so leave out if feeding younger kids)

Preheat oven to 400°F. Add all your veggies and toss with oil and salt. Roast for about 40 minutes until for tender. Add to a blender with pasta water and cottage cheese. Blend for about 2 minutes until bery smooth and the cottage cheese and zucchini is undetectable.

Mix with pasta. Optional to stir in some butter, oregano, and salt to taste. Top with additional cheese if interested.

Picky eater tip: start with less sauce and let them ask for more 👍🏻
