Ingredients:
- 1 loaf fresh Italian or French baguette bread cut into 1-inch slices
- ¼ cup olive oil (for brushing)
- 4 medium tomatoes, diced
- 1 tablespoon oregano
- Pepper to taste
- 1 pound feta cheese, crumbled
Directions:
- Preheat the oven to 375ºF. Place bread slices on a baking sheet and brush each slice with the oil. In a bowl, combine tomatoes, oregano, pepper, and feta.
- Bake bread slices for 8 minutes or until bread is crispy.
- Top each slice of bread with some of the mixture.

Ingredients
- 1 bag of 20 mixed sweet mini peppers (yellow, orange, red)
- 1 tablespoon olive oil
- 1 large onion, diced
- 1 jalapeño pepper, chopped to add taste
- 1 1-ounce bag taco mix
- 1 16-ounce can refried beans
- 1 cup shredded mixed taco cheese
Preparation
- Preheat the broiler. Line a baking sheet with parchment paper.
- Cut each pepper in half the long way. Remove seeds and stem, and place pepper halves on the lined baking sheet and set aside.
- Heat oil in a medium skillet. When hot, add onion and jalapeño pepper. Sauté until onion is golden brown, about 3 minutes. Set aside to cool.
- Use a small bowl to mix the taco mix in with the refried beans. Using a spatula or a spoon, fill each pepper halfway with some of the refried beans.
- Using your hands, sprinkle the onion and jalapeño mix on top of each filled pepper half. Sprinkle the cheese evenly over the peppers. Place the baking sheet in the oven about 8 inches away from the broiler and broil until the cheese is melted and golden, 2-3 minutes.

The carb items I limited when I fine-tuned my diet were the bad ones as seen in refined grains, sweets, and breads. There are good carbs found in fruits, vegetables, legumes, and whole grains; but those were not the ones I limited. Later in the book is a full breakdown and explanation of good carbs and bad carbs.

- 1 small red onion, diced
- ½ cup of green bell peppers, diced
- ½ cup of red bell peppers, diced
- ½ cup of yellow bell peppers, diced

- 1 Red Delicious apple, cored and diced
- ½ cup almonds, chopped
- 3 tablespoons olive oil
